These simple rainbow cookie bites would make a great homemade gift. They are very easy to make and have lots of bright sprinkles, so they are great for any event.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup rainbow sprinkles

Instructions:

Warm the oven up to 350F 175C and put parchment paper in a 9x9-inch baking pan

Melt the butter and add the sugar

Use a whisk to mix the ingredients well

To make it smooth, add the eggs and vanilla extract and mix well

Add the flour and salt slowly while mixing until they are just combined

Mix in the rainbow sprinkles until they are spread out evenly

Spread the batter out evenly in the baking pan that has been prepared

Ingredients:

  • 2 cups cooked chickpeas, drained and rinsed
  • 1 cup grated carrots
  • 1/2 cup chopped parsley

  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper optional
  • 2 tablespoons chickpea flour or other flour of choice
  • Salt and pepper to taste
  • Whole grain burger buns
  • Toppings of your choice lettuce, tomato, avocado, etc

Instructions:

In a food processor, pulse the chickpeas until roughly chopped

Add grated carrots, parsley, red onion, garlic, cumin, coriander, smoked paprika, cayenne pepper if using, chickpea flour, salt, and pepper

Pulse until well combined but still slightly chunky

Form the mixture into burger patties, using about 1/3 cup of mixture per patty

Heat a non-stick skillet over medium heat

Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through

Toast the burger buns lightly, if desired

Assemble the burgers with your favorite toppings

Serve and enjoy

Add thinly sliced beef to the marinade, ensuring all slices are well-coated

Let it marinate for at least 15 minutes

Rinse jasmine rice and place it in a stainless steel pot that fits inside the Instant Pot

Add beef broth to the rice in the pot

Place a trivet over the rice

Place marinated beef slices on a heatproof dish that fits on the trivet

In a separate bowl, mix minced garlic, grated ginger, and vegetable oil

Spread this mixture over the beef slices

Pour water into the Instant Pot and place the beef-filled dish on the trivet above the rice

Close the Instant Pot lid, set the valve to sealing, and cook on high pressure for 10 minutes
