There are a lot of good things for you in these falafel veggie burgers. Theyre great for a quick and healthy vegan meal.
Ingredients:
- 2 cups cooked chickpeas, drained and rinsed
- 1 cup grated carrots
- 1/2 cup chopped parsley
- 1/4 cup chopped red onion
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper optional
- 2 tablespoons chickpea flour or other flour of choice
- Salt and pepper to taste
- Whole grain burger buns
- Toppings of your choice lettuce, tomato, avocado, etc
Instructions:
In a food processor, pulse the chickpeas until roughly chopped
Add grated carrots, parsley, red onion, garlic, cumin, coriander, smoked paprika, cayenne pepper if using, chickpea flour, salt, and pepper
Pulse until well combined but still slightly chunky
Form the mixture into burger patties, using about 1/3 cup of mixture per patty
Heat a non-stick skillet over medium heat
Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through
Toast the burger buns lightly, if desired
Assemble the burgers with your favorite toppings
Serve and enjoy
