Ingredients:
- 1 1/2 cups mashed ripe bananas about 4 bananas
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup vegan chocolate chips
- 1/4 cup chopped walnuts optional
Instructions:
Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with paper liners
Mash the ripe bananas in a big mixing bowl until theyre smooth
To the mashed bananas, add the almond milk, vanilla extract, maple syrup, and melted coconut oil
Blend thoroughly
Mix the flour, baking powder, brown sugar, baking soda, and salt in a separate bowl
Stirring until just combined, gradually add the dry ingredients to the banana mixture
Take care not to blend too much
Add the chopped walnuts and vegan chocolate chips if using and mix well
Using a spoon, pour the batter into each muffin tin, filling it to about two thirds of the way
When a toothpick is inserted into the center of a muffin, it should come out clean after 18 to 20 minutes of baking in a preheated oven
After letting the muffins cool in the pan for a few minutes, move them to a wire rack to finish cooling
