Ingredients:
- 2 cups cooked quinoa
- 1 cup gluten-free rolled oats
- 1/2 cup chopped nuts such as almonds or pecans
- 1/4 cup honey or maple syrup
- 2 tablespoons coconut oil, melted
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup dried fruit such as cranberries or raisins
Instructions:
Preheat the oven to 325F 160C
In a large bowl, combine the cooked quinoa, rolled oats, chopped nuts, honey or maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt
Mix well to combine
Spread the mixture evenly onto a lined baking sheet
Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crisp
Remove from the oven and let cool completely
Once cooled, stir in the dried fruit
