Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions:
Season chicken breasts with salt, pepper, dried oregano, and dried thyme
In a skillet, heat olive oil over medium-high heat
Brown the chicken breasts on both sides, then transfer them to the slow cooker
In the same skillet, add minced garlic and saut until fragrant, about 1 minute
Add chicken broth, heavy cream, sun-dried tomatoes, and spinach to the skillet
Stir to combine, scraping up any browned bits from the bottom of the pan
Pour the mixture over the chicken breasts in the slow cooker
Cover and cook on low for 4-6 hours or until the chicken is cooked through and tender
Serve the Tuscan garlic chicken over cooked pasta or rice, garnished with grated Parmesan cheese
