Ingredients:
- 1 can 15 oz black beans, drained and rinsed
- 1 cup fresh mango, diced
- 1 cup fresh pineapple, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
In a large bowl, combine the black beans, mango, pineapple, red bell pepper, red onion, and cilantro
In a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper to make the dressing
Pour the dressing over the salad and toss to combine
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together
Serve the fruited black bean salad cold as a refreshing and nutritious side dish or on its own as a light meal
