Ingredients:
- 1 cup mashed sweet potato
- 2 eggs
- 1/4 cup milk
- 2 tablespoons melted butter
- 1 cup all-purpose flour

Instructions:
Preheat your waffle iron according to the manufacturers instructions
In a blender, combine the mashed sweet potato, eggs, milk, and melted butter
Blend until smooth
In a separate bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, salt, and vanilla extract
Pour the wet sweet potato mixture into the dry ingredients and stir until well combined
Lightly grease the waffle iron with cooking spray or butter
Pour the waffle batter onto the preheated waffle iron, following the manufacturers guidelines for the right amount of batter
Close the waffle iron and cook until the waffles are golden brown and crisp
