Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup chopped peanuts
- 1/2 cup powdered sugar, for coating
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until well combined and creamy
Add the eggs one at a time, mixing well after each addition
Stir in the vanilla extract
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the chocolate chips and chopped peanuts
Chill the cookie dough in the refrigerator for about 30 minutes to make it easier to handle
Shape the dough into 1-inch balls and roll them in powdered sugar to coat
Place the coated dough balls on the prepared baking sheet, leaving some space between them to allow for spreading
Bake in the preheated oven for 10-12 minutes, or until the cookies are set and slightly cracked on top
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, these cookies have a truffle-like texture thats irresistibly delicious
