Ingredients:
- 1 cup diced carrots
- 1 cup chopped celery
- 1 cup diced onions
- 2 cloves minced garlic
- 1 can 15 oz diced tomatoes
- 4 cups vegetable broth
- 1 cup cooked chickpeas
- 1 cup chopped kale
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Toss in the carrots, onions, and celery, cut up
Cook the onions until they become clear
Chopped garlic, thyme, and rosemary should be added
Add two more minutes of cooking
Add the vegetable broth and tomato chunks
Bring to a low boil
Put in chopped kale and cooked chickpeas
Let it cook for 10 to 15 minutes
Add pepper and salt to taste
