Air Fryer Chicken Quesadilla

In your air fryer, make a tasty chicken quesadilla that is crispy. Its quick, simple, and full of tasty ingredients. Great for a snack or a filling meal

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup diced jalapeos optional
  • 4 medium-sized flour tortillas
  • 1 teaspoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Preheat your air fryer to 360F 182C

Season chicken breasts with chili powder, cumin, salt, and pepper

Place the seasoned chicken breasts in the air fryer basket and cook for 12-15 minutes or until fully cooked, flipping halfway through

Remove and let cool, then shred the chicken

In a mixing bowl, combine the shredded chicken, shredded cheddar cheese, diced bell peppers, diced onions, and diced jalapeos if using

Lay out a tortilla and spread the chicken mixture evenly over half of it

Fold the other half over the top to create a quesadilla

Lightly brush the outside of the quesadilla with olive oil

Spray the air fryer basket with cooking spray and place the quesadilla inside

Air fry at 360F 182C for 4-5 minutes, flipping halfway through, until the quesadilla is crispy and the cheese is melted

Repeat the process for the remaining quesadillas

Slice the quesadillas into wedges and serve hot

This Chicken Pot Pie Soup tastes just like a traditional pot pie, but its made in a hearty soup. This dish is great for cold days and a cozy dinner at home.

Ingredients:

  • 1 lb chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup heavy cream
  • 1/2 cup all-purpose flour
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 1 refrigerated pie crust, cooked and crumbled

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

After you add the diced chicken breast, cook until the chicken is no longer pink

Take the chicken out of the pot and set it aside

Heat up the butter in the same pot and add the carrots, celery, onion, and garlic

Cook them until they are soft

Add the flour to the vegetables and mix them around to coat them

Slowly add the chicken broth while stirring all the time to avoid lumps

Put the cooked chicken back into the pot

Add salt, pepper, dried thyme, and dried parsley

Bring the soup to a simmer and stir it every now and then for 10 to 15 minutes

Add cracked cooked pie crust, heavy cream, frozen peas, and corn that has been frozen

Let it cook on low heat for five more minutes, or until the vegetables are soft and the soup is hot all the way through

If you need to, change the seasoning

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup crushed Oreo cookies
  • 12 whole Oreo cookies for decoration
  • 1 batch of your favorite chocolate frosting

Instructions:

Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners

In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt

Set aside

In another bowl, cream together the granulated sugar and softened butter until light and fluffy

Add the eggs one at a time, beating well after each addition

Stir in the vanilla extract

Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the dry ingredients

Mix until just combined

Fold in the crushed Oreo cookies into the cupcake batter

Spoon the batter into the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean

Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely
